Dr. Anthony Chaffee, a controversial doctor who consumes over a kilo of red meat every day, has stirred up debate with his bold claim that “plants are trying to kill you.” Dr. Chaffee, who studied science in the US and medicine in Ireland before relocating to Perth, has avoided vegetables for the past five years and advocates for the ‘carnivore diet.’ He shared his unconventional views in an interview, during a segment on the wellness industry and the ‘gurus’ promoting ideas that challenge conventional wisdom.
Dr. Chaffee, who hosts The Plant Free MD Podcast, argues that “Humans are apex predators, top of the food chain. What other apex predator eats salad?” He firmly believes that essential nutrients found in meat cannot be obtained from plants. “There are things in meat that you have to have that you cannot get from plants. But there is nothing in plants or fungi that you have to have that you cannot get from meat. So you have to eat meat and you certainly don’t have to eat plants. And I would argue that you don’t want to eat plants for optimal health.”
When confronted with the fact that most doctors consider his vegetable-free diet unhealthy and dangerous, Dr. Chaffee acknowledged the widespread disagreement in the medical community. “But those same practitioners and that same advice have gotten us fatter and sicker than we’ve ever been in human history,” he countered.
His extreme aversion to vegetables began two decades ago during a lecture at the University of Washington. A professor of cancer biology told Dr. Chaffee and his classmates that plants are potentially deadly. The professor said, “I don’t eat salad, I don’t eat vegetables. I don’t let my kids eat vegetables. Plants are trying to kill you.”
Dr. Chaffee insists there are historical precedents that support his view and discredit many health experts. “People were wrong about a lot of things,” he remarked. “You know, most of these … experts thought that the world was flat at one point, right? That changed.”
What is the Truth Behind Plants?
Dr. Chaffee is right that our population is sicker than ever before in history. Most experts are trying to find something to blame, whether it is the plants, too many carbs, too much fat, or too much protein. But the reality is, it isn’t that simple.
The modern-day toxic load from adulterated food has influenced a skyrocket in metabolic disease. The top issue is that 70 percent of the Standard American Diet is ultra-refined processed food filled with GMOs, glyphosate, added fructose, dangerous seed oils, and non-organic ingredients sprayed with pesticides. Those toxins have backed up our detox pathways, so that once “healthy” plant food could be now contributing to chronic disease, weight gain, and accelerated aging.
The Five Health Foods that Could Lead to Gut Pathogens
- Protein
- Fat
- Sulfur
- Oxalates
- Histamines
Our genetics provide a blueprint of what we are capable of becoming in both a positive and negative way. Eighty percent of our genetic expression is determined by our environment, not just our genes.
Poor absorption of nutrients, along with stress, can result in the activation of “bad” pathogens and negative expressions of our genes, which will further compromise immune function and gut health. This makes us more vulnerable to the effects of gut disruptors like poor diet and stress.
To properly heal the gut, you must reduce certain foods and exposure to environmental and dietary toxins while ingesting the proper nutrients to promote gut healing.
Understanding Sulfur: A Double-Edged Nutrient
Sulfur is a fascinating compound found in many foods, medications, and health supplements, and it plays a crucial role in our body’s detoxification pathways. But there’s a paradox here: certain sulfur-rich foods, like kale and broccoli, which are typically considered “healthy,” might contribute to conditions such as Crohn’s disease, ulcerative colitis, arthritis, and mental health issues.
Cruciferous vegetables, onions, garlic, and egg yolks are common dietary sources of sulfur, and even those “healthy” green juices often contain sulfuric compounds. The issue is that environmental factors have disrupted how our bodies metabolize sulfur, turning these once-beneficial foods into potential contributors to disease.
The Gluten and Glyphosate Connection
Gluten poses a significant problem because it often carries glyphosate, the primary ingredient in the weed killer Roundup. In the U.S., nearly 90% of wheat crops are sprayed with glyphosate, and genetically modified crops like corn and soy are designed to tolerate increasing amounts of it. This means glyphosate is pervasive, even showing up in organic foods due to residue in our soil and water.
Glyphosate disrupts our body’s metabolism, particularly the metabolism of glycine, an essential amino acid, and reduces our capacity to digest gluten. This leads to significant disruptions in sulfur processing.
Symptoms of Compromised Sulfur Metabolism
If your sulfur metabolism is compromised, you might experience a range of symptoms, including
- Bloating, gas, and nutrient malabsorption
- Allergies to sulfa-containing medications
- Reactions to red or white wine, garlic, or eggs
- Asthma or wheezing, especially after eating foods with preservatives or dried fruit
- Strong urine odor after eating asparagus
- Arthritis, tendonitis, or joint pain
- Parkinson’s Disease
- Crohn’s disease, ulcerative colitis, or Irritable Bowel Syndrome (IBS)
- ADHD
- Neurotransmitter imbalances (like dopamine, epinephrine, and serotonin)
- Skin rashes, such as psoriasis
The situation is further complicated by the Spike Protein, which can disrupt liver function and detox pathways, worsening sulfur metabolism issues. Additionally, sulfur-containing foods and medications can exacerbate histamine responses, adding to the challenges our bodies face.
Oxalates: The Hidden Trouble in Your Diet
Oxalic acid is a naturally occurring molecule known for its toxic and corrosive properties. When it binds with minerals like calcium, magnesium, potassium, or salt, it forms oxalates. These can be sodium oxalate, potassium oxalate, magnesium oxalate, or calcium oxalate. In plants, oxalic acid helps with mineral management, seed germination, and self-defense. But when we ingest these plants, the oxalic acid combines with minerals, particularly calcium, and deposits in our tissues, organs, and bones.
Foods rich in oxalic acid include beans, grains, bran, seeds, peanuts, almonds, Swiss chard, spinach, beets, potatoes, chocolate, rhubarb, figs, kiwi, blackberries, black pepper, cumin, and turmeric. While our bodies produce oxalate as a metabolic waste product, it doesn’t serve any known beneficial function. Instead, oxalates can steal vital minerals like iron, calcium, magnesium, and zinc, impacting overall health.
Conditions like leaky gut, Crohn’s disease, and autoimmune issues can lead to higher oxalate deposits. On the flip side, urinary problems can reduce oxalate excretion, causing oxalate poisoning when intake exceeds excretion.
Symptoms of High Oxalates
If you have high oxalate levels, you might experience:
- Pain and connective tissue issues, such as gout, arthritis, swelling, and stiffness
- Nerve irritation and dysfunction, causing neuropathic pain, poor concentration, mood issues, and sleep disturbances
- Immune system reactions, including autoimmune diseases like celiac, IBD, and rheumatoid arthritis
- Thyroid diseases, including hypothyroidism and Hashimoto’s
- Digestive problems like leaky gut, constipation, gastroenteritis, and rectal pain
- Urogenital issues, including UTIs, bladder pain, incontinence, kidney stones, and prostatitis
Oxalates also bind with essential minerals like iron, magnesium, and calcium, leading to nutritional depletion and increased oxalate production, creating a harmful cycle. The spike protein can further disrupt oxalate metabolism, worsening the histamine response.
Fat Metabolism
Efficient fat metabolism and absorption are crucial for brain function and cognitive health. However, some people have genetic predispositions that make fat absorption challenging, especially on high-fat diets with toxic seed oils. This can lead to poor fat metabolism and liver congestion, contributing to systemic intoxication.
Chronic stress releases epinephrine, a fat-based hormone that hinders fat processing. This persistent stress response can disrupt digestion, compromise immunity, and exacerbate fat malabsorption. Symptoms include:
- Light, floating, greasy stools
- Strong body odor
- Bumps on the back of the arms
- Acne
- Yellowish skin tone
- Very dry skin
- Hormonal imbalances (e.g., PCOS or PMS)
- Edema
- Diarrhea
- Nausea or excessive fullness after eating
- Gallbladder pain and related issues
To manage fat malabsorption, avoid high-fat nuts, fatty fish, and rich wild meats.
Amyloid Proteins
Amyloid proteins aren’t found in plants but they cause the plant food to wreak additional havoc on the body. These proteins are found in chicken, pork, turkey, and conventionally raised beef and can be difficult for the body to break down into usable amino acids, leading to their accumulation in the brain, kidneys, and other tissues. This buildup is associated with Alzheimer’s and other neurodegenerative diseases. Amyloid proteins also protect harmful pathogens in the gut, encouraging the growth of detrimental bacteria, candida, and fungi, which leads to gut dysbiosis and weakens the immune system.
Consuming foods rich in amyloid proteins can further strengthen pathogens like Streptococcus, Mycobacterium, Staphylococcus, Salmonella, Candida, and Lyme, aiding their proliferation. The spike protein has been found to contribute to amyloid generation, increasing the risk of pathogen control over our systems. Avoiding amyloid-rich foods and supporting immune health are now more crucial than ever.
Histamines
Histamines are organic compounds with various functions, including immune responses, stomach acid regulation, and neurotransmission. They are produced and stored by white blood cells, mast cells, basophils, and stomach lining cells. Histamine intolerance occurs when the body struggles to metabolize histamine efficiently, leading to symptoms like recurring headaches, abdominal pain, diarrhea, hives, itching, nasal and respiratory symptoms, fatigue, flushing, and irregular heartbeat. High histamine foods include bananas, avocados, bone broth, fermented vegetables, and alcohol.
In conclusion, it isn’t that plants are “evil”; some categories of plants and animals could cause health issues. Understanding and managing these factors can help maintain better health and mitigate the adverse effects of oxalates, fat malabsorption, amyloid proteins, and histamine intolerance.
Supplements to Boost Protein Synthesis and Longevity
Acceleradine® Iodine
Essential for Addressing Iodine Deficiency, Acceleradine® Iodine is a game-changer for tackling the widespread issue of iodine deficiency, which affects 96% of the U.S. population. This deficiency severely hampers protein synthesis and mitochondrial function, reducing ATP production from the ideal 36 to a mere 2, leading to a sluggish metabolism and weight gain.
Benefits of Iodine:
- Improved Protein Synthesis: Iodine is essential for helping the body synthesize and utilize amino acids.
- Optimal Thyroid Function: Critical for producing thyroid hormones T2, T3, and T4, which represent Tyrosine, coming from animal protein, and the number of molecules of iodine. Modern diets and even iodized salt don’t provide enough, risking mineral depletion and microplastic contamination.
- Boosts ATP Production: Increases ATP production in mitochondria, enhancing energy levels and supporting a more active metabolism.
- Cellular Detoxification: Helps detoxify cells from heavy metals, toxins, and radiation that hinder metabolism and weight loss.
- Displaces Harmful Substances: Removes fluoride, chlorine, and bromide from cells, which contribute to hypothyroidism and a sluggish metabolism.
- Prevents Toxic Overload: With high-dose administration, prevents new toxins from binding to cell receptor sites.
- Mitigates Spike Protein Damage: It may alleviate the damage caused by the spike protein, linked to metabolic slowdowns, inhibited protein absorption, and weight gain.
Blood Cleansing and Hormonal Balance: Cleanses the blood and supports liver detoxification, helping to eliminate toxins linked to disease and weight gain. Iodine also regulates estrogen, promoting hormonal balance and reducing estrogen dominance.
Why Acceleradine® Iodine? Acceleradine® Iodine stands out as the only pure, natural singlet active iodine (I-) suspended in alcohol and enhanced with scalar frequencies. Because it’s a single atom of iodine without attachments to other atoms, it achieves increased bioavailability and absorbability, ensuring maximum benefits even for those with weaker bodies. Most iodine supplements only achieve 10 to 20 percent absorption.
